Deep Fried Pepper Anchovies
Snack with a kick - and high calcium.
INGREDIENTS
- Anchovies
- Pepper to taste
- Cooking Oil for frying
DIRECTIONS
- Clean the anchovies by peeling off the heads and 'shit'.
- Rinse gently the anchovies for 2 times. This is to rinse off the dust and the extra salt on anchovies.
- Sprinkle with some pepper on the drained anchovies. Preheat the oven to 150 Celcius and bake the anchovies for 10 minutes.
- Heat the cooking oil until hot in a wok. Stir-fry the anchovies slowly over medium heat until golden brown.
- Drain the fried anchovies by putting them on the cooking tissue. Sprinkle with some pepper when it is still hot. You can sprinkle more pepper to it if you like hot stuff. :)~
- Ready to serve.
TIPS
- Fish bones rich in calcium. So, peel the 'shit' only and leave its bones in the body.
- The reason we bake before we fry the anchovies is to avoid oil spitting all over the place during frying and anchovies will be turned more crunchy this way. Trust me. :D

Alternative to pepper, you can try:
1) fry with chopped chilli and a bit of sugar
2) fry with some sliced big onions and peanuts

the 2nd one ley... dun like big onions with my anchovies..
dunno why.. just love the pepper anchovies.. the XTRA pepper anchovies ... make some yesterday.. not enough for me though :(.. coz being 'controlled' by someone lor... errr... :P
next time "da pao" some to office too! :)
